PONZU - THE SECRET WEAPON SAUCE
Ever wonder what that special something is that makes our Truffle Hamachi so tasty? That special ingredient you're probably tasting is called ponzu - the secret weapon sauce.
Ponzu is a citrus-based sauce commonly used in Japanese cuisine. Ponzu is tart, with a thin, watery consistency and a dark brown color. It is often used as an alternative to regular soy sauce.
In Japanese, ponzu translates to "vinegar punch." It is made by simmering mirin, rice vinegar, katsuobushi flakes and seaweed. The resulting liquid is then cooled and strained to remove any flakes. Next the juice of a citrus fruit is added. The fruit can be yuzu, sudachi, daidai, kabosu or lemon.
Ponzu is great when used as a dressing drizzled over meat or fish, and is also perfect as a dip for sashimi. At Yamashiro, our Hamachi sashimi includes white truffle infused ponzu sauce - giving it the sauce equivalent of a knock out punch.
